Description
A light, fluffy spinach feta frittata made with fresh spinach, creamy feta cheese, and fluffy eggs perfect for breakfast, brunch, or a quick dinner.
Ingredients
8 large eggs
1/4 cup milk
2 cups fresh spinach, chopped
1/2 cup crumbled feta cheese
1 small onion, finely diced
1 tbsp olive oil
Salt, to taste
Black pepper, to taste
Instructions
1. Preheat oven to 375°F (190°C).
2. In a large bowl, whisk together eggs, milk, salt, and pepper until well blended.
3. Heat olive oil in an oven-safe skillet over medium heat.
4. Add diced onion and cook until softened, about 3–4 minutes.
5. Stir in chopped spinach and sauté until wilted.
6. Pour the egg mixture evenly over the spinach and onion.
7. Sprinkle crumbled feta cheese on top.
8. Cook on the stove for 2–3 minutes until the edges start to set.
9. Transfer skillet to the oven and bake for 12–15 minutes, or until the frittata is fully set in the center.
10. Remove from oven, cool slightly, then slice and serve warm.
Notes
You can substitute baby kale for spinach for a different flavor.
For extra creaminess, add a splash of heavy cream instead of milk.
Great served with crusty bread or a fresh side salad.
