- 2 cups Fresh Spinach (sautéed)
- 4 cloves Garlic (minced)
- 1 small Onion (optional, finely chopped)
- 1 large Egg
- 1 cup Breadcrumbs (can use oats or almond flour)
- 1/2 cup Grated Parmesan Cheese
- 8 oz Low-Moisture Mozzarella Cubes (chilled)
- 1 tbsp Italian Seasoning
- Salt, to taste
- Pepper, to taste
- 1/2 tsp Red Pepper Flakes (for heat)
- 1 tbsp Chopped Parsley (for garnish)
Instructions
- Sauté the Spinach: In a pan over medium heat, sauté the fresh spinach until wilted.
- Mix Ingredients: In a large bowl, combine the ground meat, sautéed spinach, minced garlic, chopped onion (if using), egg, breadcrumbs, grated Parmesan, Italian seasoning, salt, pepper, and red pepper flakes. Mix until combined.
- Form the Meatballs: Shape the mixture into meatballs about 1 to 1.5 inches in diameter, pressing a cube of mozzarella into the center of each.
- Bake or Pan-Fry: Preheat the oven to 400°F (200°C). Bake the meatballs on a lined baking sheet for 20-25 minutes or pan-fry in olive oil.
- Garnish and Serve: Let meatballs rest for a few minutes before garnishing with chopped parsley and serving.
Notes
Use chilled mozzarella to prevent leaks during cooking. Feel free to adjust seasonings according to taste.
