Description
A comforting dish of spinach and cheese ravioli paired with a creamy Alfredo sauce and earthy mushrooms, perfect for any cozy dinner or gathering.
Ingredients
Scale
- 1 lb (450g) spinach and cheese ravioli
- 2 tablespoons olive oil or butter
- 1 cup sliced mushrooms (button, cremini, or your favorite variety)
- 2 cups fresh spinach (chopped)
- 1 ½ cups heavy cream
- ¾ cup grated Parmesan cheese
- 2 garlic cloves (minced)
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
- Optional: fresh parsley (chopped, for garnish)
Instructions
- Cook the ravioli according to the package instructions until they float to the surface. Drain and set aside.
- In a large skillet, heat olive oil or butter over medium heat, and sauté mushrooms until softened, about 5 minutes.
- Add minced garlic and cook for about a minute until fragrant. Then add chopped spinach, sautéing until wilted.
- Pour in heavy cream, bring to a gentle simmer, then mix in Parmesan cheese, Italian seasoning, salt, and pepper until the sauce thickens, about 3-4 minutes.
- Toss the cooked ravioli into the skillet, coating them evenly with the sauce.
- Garnish with fresh parsley if desired and serve immediately.
Notes
Use freshly grated Parmesan for better melting and flavor. You can substitute half of the heavy cream with broth for a lighter version.
