  • 1 cup sliced mushrooms (button, cremini, or your favorite variety)
  • 2 cups fresh spinach (chopped)
  • 1 ½ cups heavy cream
  • ¾ cup grated Parmesan cheese
  • 2 garlic cloves (minced)
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • Optional: fresh parsley (chopped, for garnish)

Instructions

  1. Cook the ravioli according to the package instructions until they float to the surface. Drain and set aside.
  2. In a large skillet, heat olive oil or butter over medium heat, and sauté mushrooms until softened, about 5 minutes.
  3. Add minced garlic and cook for about a minute until fragrant. Then add chopped spinach, sautéing until wilted.
  4. Pour in heavy cream, bring to a gentle simmer, then mix in Parmesan cheese, Italian seasoning, salt, and pepper until the sauce thickens, about 3-4 minutes.
  5. Toss the cooked ravioli into the skillet, coating them evenly with the sauce.
  6. Garnish with fresh parsley if desired and serve immediately.

Notes

Use freshly grated Parmesan for better melting and flavor. You can substitute half of the heavy cream with broth for a lighter version.
