Description

Delicious salmon fillets stuffed with a creamy spinach and cheese mixture, perfectly baked to create a healthy yet indulgent dish.


Ingredients

  • 4 salmon fillets (6 oz each)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 tablespoon garlic, minced
  • 1/2 medium onion, finely chopped
  • 2 cups fresh spinach, roughly chopped
  • 1/4 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the garlic and onion, sautéing for 2-3 minutes until softened and fragrant.
  3. Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and allow it to cool slightly.
  4. In a mixing bowl, combine the cream cheese, Parmesan cheese, mozzarella cheese, lemon zest, lemon juice, and the cooked spinach mixture. Stir everything together until well combined. Season with salt, pepper, and red pepper flakes (if using).
  5. Using a sharp knife, make a slit along the side of each salmon fillet to create a pocket for the stuffing. Be careful not to cut all the way through.
  6. Stuff each salmon fillet with the spinach mixture, dividing the filling evenly among the fillets.
  7. Heat the remaining 1 tablespoon of olive oil in an oven-safe skillet over medium-high heat. Season the salmon fillets with salt and pepper, then place them in the skillet, skin-side down.
  8. Sear the salmon for 2-3 minutes until the skin is crispy, then transfer the skillet to the preheated oven.
  9. Bake for 12-15 minutes or until the salmon is cooked through and flakes easily with a fork.
  10. Remove from the oven and garnish with fresh parsley and additional lemon slices, if desired.

Notes

Use fresh salmon for the best flavor, and don’t hesitate to adjust the seasoning to your preference. This dish pairs well with a side of roasted vegetables or a fresh salad.
