Description

Ingredients

  • 8 oz pasta (fettuccine or penne)
  • 2 tablespoons olive oil
  • 1 cup bell peppers (sliced)
  • 1 cup zucchini (sliced)
  • 1 cup cherry tomatoes (halved)
  • 1 cup broccoli florets
  • 3 cloves garlic (minced)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the garlic and sauté for 1 minute.
  3. Add the sliced vegetables and cook for about 5-7 minutes until they are tender.
  4. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese and season with salt and pepper.
  5. Add the cooked pasta to the skillet and toss to coat with the sauce and vegetables.
  6. Serve hot, garnished with fresh basil.

Notes

For a lighter version, substitute half the heavy cream with vegetable broth or use a lower-fat cream alternative.
