Description

A delightful quiche filled with fresh spring vegetables and a creamy, cheesy filling, all encased in a crispy, buttery crust.


Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 8 tablespoons cold unsalted butter, cubed
  • 34 tablespoons ice water
  • 1 tablespoon olive oil
  • 1/2 cup asparagus, trimmed and cut into 1-inch pieces
  • 1/2 cup zucchini, diced
  • 1/2 cup baby spinach, roughly chopped
  • 1/3 cup spring onions or scallions, thinly sliced
  • 1/3 cup peas (fresh or thawed frozen)
  • 1 cup Gruyère or Swiss cheese, grated
  • 4 large eggs
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon grated nutmeg

Instructions

  1. Preheat your oven to 375°F. In a mixing bowl, combine flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  2. Add ice water, one tablespoon at a time, mixing until the dough holds together. Shape the dough into a disk, wrap it, and refrigerate for 20 minutes.
  3. Roll the dough on a floured surface to fit a 9-inch tart pan, pressing it into the pan and trimming any excess. Prick the base with a fork, line with parchment paper, and fill with pie weights or dry beans.
  4. Bake the weighted crust for 15 minutes. Remove the weights and parchment, then bake for an additional 5 minutes. Set aside to cool slightly.
  5. In a skillet, heat olive oil over medium heat. Sauté asparagus and zucchini for 3-4 minutes until tender. Add spinach, scallions, and peas, cooking for an additional 1-2 minutes. Remove from heat and let cool slightly.
  6. In a separate bowl, whisk together eggs, heavy cream, whole milk, salt, pepper, and nutmeg until fully combined. Stir in half of the grated cheese.
  7. Spread the sautéed vegetables evenly over the pre-baked crust. Pour the egg mixture over the vegetables, and top with the remaining cheese.
  8. Bake for 30-35 minutes until the filling is completely set and the top is golden brown.
  9. Allow the quiche to cool for 10 minutes before slicing and serving warm.

Notes

Chill your dough for a flakier texture. Use seasonal vegetables for the best flavor. Allow the quiche to cool slightly before slicing.
