Description
A delightful vanilla cake topped with whipped cream and fresh blueberries and strawberries, perfect for summer barbecues and patriotic celebrations.

- 2 2/3 cups cake flour
- 1 tablespoon baking powder
- 3/4 teaspoon salt
- 1 2/3 cups C&Hยฎ granulated sugar
- 3/4 cup butter (softened)
- 3 large eggs
- 1 1/2 teaspoons vanilla extract
- 1 cup milk
- 2 1/2 cups heavy whipping cream (chilled)
- 4 tablespoons C&Hยฎ powdered sugar
- 1/2 pint fresh blueberries (washed)
- 2 pints fresh strawberries (washed, hulled, and halved)
Instructions
- Preheat oven to 375ยฐF and grease a 13ร9-inch baking pan. Line it with parchment paper and grease again.
- Mix the cake flour, baking powder, and salt in a bowl.
- Beat the sugar and butter until light and fluffy in a large bowl.
- Add eggs one at a time, mixing well after each addition. Add vanilla extract.
- Gradually mix in the flour mixture and milk alternately, starting and ending with the flour.
- Pour the batter into the prepared pan and bake for 35-40 minutes, or until a toothpick inserted comes out clean.
- Allow to cool for 10 minutes before transferring to a wire rack to cool completely.
- Whip the heavy cream and powdered sugar until soft peaks form in a separate bowl.
- Spread the whipped cream over the cooled cake and decorate with blueberries and strawberries.
- Chill until ready to serve.
Notes
For a better bake, bring your ingredients to room temperature and do not overmix the batter for a fluffy texture.
