- 4 boneless, skinless chicken breasts
- Salt and black pepper, to taste
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- 2 tbsp butter
- Optional: fresh parsley for garnish
Instructions
- Pat the chicken breasts dry with a paper towel and season both sides with salt, pepper, garlic powder, and paprika.
- Set up a dredging station with flour, beaten eggs, and a mixture of panko breadcrumbs and Parmesan.
- Dredge each chicken breast in flour, dip into beaten eggs, then coat with the breadcrumb mixture.
- Heat olive oil and butter in a skillet over medium heat, add the coated chicken, and cook for 4–6 minutes on each side until golden brown and cooked to an internal temperature of 165°F (74°C).
- Transfer to a plate lined with paper towels, garnish with parsley, and serve with sides like mashed potatoes and steamed veggies.
Notes
For a healthier option, bake the coated chicken at 400°F (200°C) for 20 minutes, flipping halfway.
