A comforting autumn dish featuring savory marinated chicken glazed with apple cider and paired with a vibrant slaw.


Ingredients

  • 4 chicken thighs
  • 1 cup apple cider
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 6 cups mixed greens (cabbage, carrots, etc.)
  • 1/2 cup apple, thinly sliced
  • 1/4 cup dried cranberries
  • 1/4 cup walnuts, chopped
  • 1/4 cup apple cider vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon Dijon mustard

Instructions

  1. In a bowl, mix together apple cider, soy sauce, honey, garlic powder, onion powder, salt, and pepper.
  2. Marinate the chicken thighs in the mixture for at least 30 minutes.
  3. Preheat the oven to 375°F (190°C).
  4. Place the marinated chicken in a baking dish and pour the remaining marinade over it.
  5. Bake for 25-30 minutes, or until the chicken is cooked through.
  6. Toss together mixed greens, sliced apple, cranberries, walnuts, apple cider vinegar, olive oil, and Dijon mustard to make the slaw.
  7. Serve the sticky chicken over the slaw and enjoy!

Don’t rush the marination; ideally, let the chicken marinate for a few hours or even overnight.
