- 1 cup pitted dates, chopped
- 1 teaspoon baking soda
- 1 cup boiling water
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract

- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup heavy cream
- 1 cup packed brown sugar (for sauce)
- 1/2 cup unsalted butter (for sauce)
Instructions
- Preheat your oven to 350°F (175°C). Grease a baking dish.
- In a bowl, combine chopped dates and baking soda. Pour boiling water over them and let soak for 20 minutes.
- In a separate bowl, cream together softened butter and brown sugar. Beat in the eggs one at a time, then stir in vanilla.
- Mix in the flour, baking powder, and salt until just combined. Fold in the soaked dates and water.
- Pour the batter into the prepared baking dish and bake for 30-35 minutes until a toothpick inserted comes out clean.
- For the toffee sauce, combine heavy cream, brown sugar, and butter in a saucepan. Cook until the sauce thickens slightly.
- Serve the pudding warm, drizzled with toffee sauce and a scoop of vanilla ice cream.
Notes
Make sure your dates are fresh for the best flavor. Don’t overmix the batter; it should be just combined for a fluffy texture. Using higher quality vanilla extract makes a noticeable difference in taste.
