  • 1 cup boiling water
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup heavy cream
  • 1 cup packed brown sugar (for sauce)
  • 1/2 cup unsalted butter (for sauce)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking dish.
  2. In a bowl, combine chopped dates and baking soda. Pour boiling water over them and let soak for 20 minutes.
  3. In a separate bowl, cream together softened butter and brown sugar. Beat in the eggs one at a time, then stir in vanilla.
  4. Mix in the flour, baking powder, and salt until just combined. Fold in the soaked dates and water.
  5. Pour the batter into the prepared baking dish and bake for 30-35 minutes until a toothpick inserted comes out clean.
  6. For the toffee sauce, combine heavy cream, brown sugar, and butter in a saucepan. Cook until the sauce thickens slightly.
  7. Serve the pudding warm, drizzled with toffee sauce and a scoop of vanilla ice cream.

Notes

Make sure your dates are fresh for the best flavor. Don’t overmix the batter; it should be just combined for a fluffy texture. Using higher quality vanilla extract makes a noticeable difference in taste.
