Ingredients

  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup (227g) unsalted butter, softened
  • 2 cups (400g) granulated sugar
  • 1 and ½ teaspoons vanilla extract
  • 3 large eggs, room temperature
  • 1 large egg white, room temperature
  • 1 cup (240g) milk, room temperature
  • 2 cups finely chopped strawberries
  • 1 cup (20g) freeze-dried strawberries
  • 1 cup (227g) unsalted butter for frosting, softened
  • 4 to 5 cups (480-600g) powdered sugar
  • ¼ to â…“ cup (60-80mL) milk or cream
  • 2 teaspoons vanilla extract for frosting
  • ¼ teaspoon salt for frosting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans or line them with parchment paper.
  2. Whisk together the flour, baking powder, and salt in a bowl. Set aside.
  3. Beat the softened butter and sugar together until creamy and light in color, about 3-5 minutes.
  4. Add in the vanilla extract, eggs, and egg white, mixing well.
  5. Gradually mix in the dry ingredients, alternating with milk until everything is well combined.
  6. Fold in the chopped strawberries and freeze-dried strawberries gently.
  7. Divide the batter among the prepared pans and smooth out the tops.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  9. Beat butter in a mixing bowl until creamy for the buttercream.
  10. Add powdered sugar gradually, mixing well until reaching the desired consistency.
  11. Incorporate milk or cream a bit at a time, along with vanilla extract and salt, mixing until smooth and fluffy.
  12. Layer one cake layer on a platter, spreading a layer of buttercream on top. Repeat with the second layer.
  13. Place the final layer on top and frost the entire cake with the remaining buttercream.
  14. Decorate with extra strawberries if desired.

Notes

Use fresh strawberries for the best flavor. Make sure all ingredients are at room temperature for optimal results.
