Description

A creamy strawberry cheesecake with a rich texture and sweet strawberry topping, perfect for any occasion.


Ingredients

  • 1 cup graham cracker crumbs
  • 2 ½ tablespoons butter (melted)
  • 1 ½ tablespoons sugar
  • Pinch of salt
  • 2 (8 oz) packages cream cheese (softened)
  • 2 eggs
  • â…” cup sugar
  • â…” cup sour cream
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 ½ lbs strawberries
  • 1 ½ teaspoons cornstarch
  • 3 to 6 tablespoons sugar (adjust as needed)
  • 1 ½ tablespoons lemon juice

Instructions

  1. Preheat the oven to 350°F.
  2. Line the bottom of your springform pan with a parchment paper round.
  3. Double wrap the pan with heavy-duty aluminum foil.
  4. Mix the graham cracker crumbs, melted butter, sugar, and a pinch of salt in a bowl.
  5. Press this mixture into the bottom of the springform pan.
  6. Beat the softened cream cheese until smooth.
  7. Add in the eggs, sugar, sour cream, vanilla extract, and salt.
  8. Pour the cheesecake filling over the prepared crust.
  9. Bake for about 25 minutes.
  10. Prepare the strawberry topping in a saucepan.
  11. Allow to cool before pouring over the cheesecake.
  12. Serve chilled.

Notes

Use room temperature cream cheese for a smooth mixture. Chill thoroughly for best texture.
