- 1 cup graham cracker crumbs
- 2 ½ tablespoons butter (melted)
- 1 ½ tablespoons sugar
- Pinch of salt
- 2 (8 oz) packages cream cheese (softened)
- 2 eggs
- â…” cup sugar
- â…” cup sour cream
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 1 ½ lbs strawberries
- 1 ½ teaspoons cornstarch
- 3 to 6 tablespoons sugar (adjust as needed)
- 1 ½ tablespoons lemon juice
Instructions
- Preheat the oven to 350°F.
- Line the bottom of your springform pan with a parchment paper round.
- Double wrap the pan with heavy-duty aluminum foil.
- Mix the graham cracker crumbs, melted butter, sugar, and a pinch of salt in a bowl.
- Press this mixture into the bottom of the springform pan.
- Beat the softened cream cheese until smooth.
- Add in the eggs, sugar, sour cream, vanilla extract, and salt.
- Pour the cheesecake filling over the prepared crust.
- Bake for about 25 minutes.
- Prepare the strawberry topping in a saucepan.
- Allow to cool before pouring over the cheesecake.
- Serve chilled.
Notes
Use room temperature cream cheese for a smooth mixture. Chill thoroughly for best texture.
