Instructions
- Preheat the oven to 350°F.
- Prepare the springform pan by lining the bottom with parchment paper and wrapping it with aluminum foil.
- Make the crust by mixing the graham cracker crumbs, melted butter, sugar, and salt; press into the springform pan.
- Prepare the cheesecake filling by beating the softened cream cheese until smooth and adding eggs, sugar, sour cream, vanilla, and salt.
- Bake the cheesecake for about 25 minutes, until the edges are set and the center has a slight jiggle.
- Make the strawberry topping by cooking sliced strawberries with cornstarch, sugar, and lemon juice over medium heat.
- Cool the cheesecake completely before adding the strawberry sauce; chill in the refrigerator for a few hours.
- Slice the cheesecake and serve with extra strawberry sauce if desired.
