- 1 cup graham cracker crumbs
- 2 ½ tablespoons butter (melted)
- 1 ½ tablespoons sugar
- Pinch of salt
- 2 (8oz) packages cream cheese (softened)
- 2 eggs
- â…” cup sugar
- â…” cup sour cream
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 1 ½ lbs strawberries
- 1 ½ teaspoons cornstarch
- 3 to 6 tablespoons sugar (adjust as needed)
- 1 ½ tablespoons lemon juice
Instructions
- Preheat your oven to 350°F (175°C) and line the bottom of your springform pan with parchment paper.
- Mix the graham cracker crumbs, melted butter, sugar, and salt in a bowl until combined. Press into the bottom of the pan and bake for about 10 minutes.
- Beat the softened cream cheese in a large bowl until smooth, then gradually mix in the sugar, incorporating the eggs one at a time.
- Stir in the sour cream, vanilla extract, and salt until completely smooth.
- Pour the cheesecake filling over the cooled crust and bake for approximately 25 minutes until the center is set but still slightly jiggly.
- Cool the cheesecake in the oven with the door ajar for an hour.
- Wash and slice the strawberries. In a saucepan, mix strawberries with cornstarch, sugar, and lemon juice over medium heat until thickened.
- Top the cooled cheesecake with the strawberry sauce, slice, and enjoy!
Notes
Ensure cream cheese is at room temperature for a smooth filling. Use fresh strawberries for the topping for the best flavor.
