Description

A delightful dessert that combines a rich, creamy cheesecake with the sweet flavor of fresh strawberries, all atop a crunchy graham cracker crust.


Ingredients

  • 1 cup graham cracker crumbs
  • 2 ½ tablespoons butter (melted)
  • 1 ½ tablespoons sugar
  • Pinch of salt
  • 2 (8oz) packages cream cheese (softened)
  • 2 eggs
  • â…” cup sugar
  • â…” cup sour cream
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 ½ lbs strawberries
  • 1 ½ teaspoons cornstarch
  • 3 to 6 tablespoons sugar (adjust as needed)
  • 1 ½ tablespoons lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and line the bottom of your springform pan with parchment paper.
  2. Mix the graham cracker crumbs, melted butter, sugar, and salt in a bowl until combined. Press into the bottom of the pan and bake for about 10 minutes.
  3. Beat the softened cream cheese in a large bowl until smooth, then gradually mix in the sugar, incorporating the eggs one at a time.
  4. Stir in the sour cream, vanilla extract, and salt until completely smooth.
  5. Pour the cheesecake filling over the cooled crust and bake for approximately 25 minutes until the center is set but still slightly jiggly.
  6. Cool the cheesecake in the oven with the door ajar for an hour.
  7. Wash and slice the strawberries. In a saucepan, mix strawberries with cornstarch, sugar, and lemon juice over medium heat until thickened.
  8. Top the cooled cheesecake with the strawberry sauce, slice, and enjoy!

Notes

Ensure cream cheese is at room temperature for a smooth filling. Use fresh strawberries for the topping for the best flavor.
