  • 2 cups (332 g) freshly diced strawberries
  • ¾ cup (94 g) all-purpose flour
  • ¼ cup (50 g) light brown sugar, packed
  • ¼ teaspoon kosher salt
  • 5 tablespoons unsalted butter, melted

Instructions

  1. Prepare the Crust: Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, melted butter, and ¼ cup of granulated sugar. Stir until the mixture resembles wet sand. Press it evenly into the bottom of a greased 9×13 inch baking dish. Bake for 10 minutes, then let it cool slightly.
  2. Make the Cheesecake Filling: In a large mixing bowl, beat the cream cheese until it’s smooth. Add in the ⅓ cup granulated sugar, eggs, vanilla extract, and ¼ teaspoon kosher salt. Mix until well combined, ensuring there are no lumps.
  3. Add the Strawberries: Gently fold in the fresh diced strawberries into the cheesecake mixture.
  4. Prepare the Crumble Topping: In another bowl, mix together the flour, light brown sugar, and ¼ teaspoon kosher salt. Pour in the melted butter and stir until crumbly. Sprinkle this mixture over the cheesecake filling.
