- 1 ½ cups graham cracker crumbs
- 6 tablespoons unsalted butter, melted
- 2 packages cream cheese (8 ounces each), room temperature
- 2 large eggs, room temperature
- ⅓ cup granulated sugar
- 2 cups freshly diced strawberries
- 1 teaspoon vanilla extract
- ¼ teaspoon kosher salt
- ¾ cup all-purpose flour
- ¼ cup light brown sugar, packed
- ¼ teaspoon kosher salt
- 5 tablespoons unsalted butter, melted
Instructions
- Preheat your oven to 350°F. Line a 9×9-inch baking dish with parchment paper.
- Mix the graham cracker crumbs with melted butter and a bit of sugar, then press into the bottom of the baking dish.
- Beat together the cream cheese, eggs, sugar, vanilla extract, and kosher salt until smooth. Spread evenly over the crust.
- Fold in the diced strawberries gently into the cheesecake filling.
- Combine flour, brown sugar, salt, and melted butter for the crumble topping, then sprinkle over the cheesecake.
- Bake for 35-40 minutes, until set. Allow to cool completely before refrigerating for at least an hour.
Notes
Use fresh strawberries for the best flavor. Make sure all ingredients are at room temperature for a smooth filling.
