Ingredients

  • 1 cup graham cracker crumbs
  • 2 ½ tablespoons melted butter
  • 1 ½ tablespoons sugar
  • 1 pinch salt
  • 2 (8 oz) packages cream cheese, softened
  • 2 eggs
  • â…” cup sugar

  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 ½ lbs strawberries
  • 1 ½ teaspoons cornstarch
  • 3 to 6 tablespoons sugar (for strawberries, adjust as needed)
  • 1 ½ tablespoons lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line the bottom of a springform pan with parchment paper and wrap it in aluminum foil to catch any drips.
  3. Combine graham cracker crumbs, melted butter, sugar, and a pinch of salt in a bowl. Press this mixture into the bottom of the prepared pan to form a crust.
  4. Beat the softened cream cheese in a large bowl until smooth. Gradually mix in the sugar, then add the eggs, sour cream, vanilla extract, and salt, blending until smooth.
  5. Pour the cream cheese filling over the crust and bake for about 60 minutes, or until the edges are set but the center is still slightly jiggly.
  6. Combine sliced strawberries, cornstarch, sugar (to taste), and lemon juice in a saucepan for the topping. Cook over medium heat until the strawberries soften and the mixture thickens.
  7. Once the cheesecake has cooled, remove it from the pan, top it with the strawberry mixture, and serve chilled.

Notes

Soften cream cheese for a smoother batter; chill completely to prevent cracks. Adjust sweetness based on berries.
