- 1 cup graham cracker crumbs
- 2 ½ tablespoons melted butter
- 1 ½ tablespoons sugar
- 1 pinch salt
- 2 (8 oz) packages cream cheese, softened
- 2 eggs

- 1 ½ lbs strawberries
- 1 ½ teaspoons cornstarch
- 3 to 6 tablespoons sugar (for strawberries, adjust as needed)
- 1 ½ tablespoons lemon juice
Instructions
- Preheat the oven to 350°F (175°C).
- Line the bottom of a springform pan with parchment paper and wrap it in aluminum foil to catch any drips.
- Combine graham cracker crumbs, melted butter, sugar, and a pinch of salt in a bowl. Press this mixture into the bottom of the prepared pan to form a crust.
- Beat the softened cream cheese in a large bowl until smooth. Gradually mix in the sugar, then add the eggs, sour cream, vanilla extract, and salt, blending until smooth.
- Pour the cream cheese filling over the crust and bake for about 60 minutes, or until the edges are set but the center is still slightly jiggly.
- Combine sliced strawberries, cornstarch, sugar (to taste), and lemon juice in a saucepan for the topping. Cook over medium heat until the strawberries soften and the mixture thickens.
- Once the cheesecake has cooled, remove it from the pan, top it with the strawberry mixture, and serve chilled.
Notes
Soften cream cheese for a smoother batter; chill completely to prevent cracks. Adjust sweetness based on berries.
