Ingredients

  • 2 cups fresh strawberries
  • 1/2 cup oats

  • 1/4 cup coconut oil (melted)
  • 2 tablespoons brown sugar
  • A pinch of salt

Instructions

  1. Prepare the Chia Pudding: In a mixing bowl, combine chia seeds, almond milk, maple syrup, and vanilla extract. Stir well to ensure no clumps. Let sit for about 10 minutes, stirring occasionally.
  2. Make the Strawberry Layer: While the chia pudding is setting, wash and hull fresh strawberries. Blend until smooth, adding maple syrup if sweeter is desired. Reserve slices for garnish.
  3. Prepare the Crumble: In a separate bowl, mix oats, almond flour, melted coconut oil, brown sugar, and salt until crumbly. Spread on a baking sheet and toast in a preheated oven at 350°F (175°C) for about 10-15 minutes.
  4. Assemble the Pudding: Layer chia pudding in serving glasses, starting with pudding, then strawberry puree, followed by crumble. Repeat layers as needed, finishing with crumble.
  5. Chill and Serve: Allow assembled pudding to chill in the refrigerator for at least 1 hour before serving.
