- 2 tablespoons maple syrup (or honey)
- 1 teaspoon vanilla extract
- 2 cups fresh strawberries
- 1/2 cup oats
- 1/4 cup almond flour
- 1/4 cup coconut oil (melted)
- 2 tablespoons brown sugar
- A pinch of salt
Instructions
- Prepare the Chia Pudding: In a mixing bowl, combine chia seeds, almond milk, maple syrup, and vanilla extract. Stir well to ensure no clumps. Let sit for about 10 minutes, stirring occasionally.
- Make the Strawberry Layer: While the chia pudding is setting, wash and hull fresh strawberries. Blend until smooth, adding maple syrup if sweeter is desired. Reserve slices for garnish.
- Prepare the Crumble: In a separate bowl, mix oats, almond flour, melted coconut oil, brown sugar, and salt until crumbly. Spread on a baking sheet and toast in a preheated oven at 350°F (175°C) for about 10-15 minutes.
- Assemble the Pudding: Layer chia pudding in serving glasses, starting with pudding, then strawberry puree, followed by crumble. Repeat layers as needed, finishing with crumble.
- Chill and Serve: Allow assembled pudding to chill in the refrigerator for at least 1 hour before serving.
