Description

Delicious bite-sized cheesecake treats with a strawberry flavor and crunchy topping, perfect for any occasion.


Ingredients

  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 2 large eggs
  • 1/2 cup strawberry puree or strawberry jam
  • 1 1/2 cups crushed graham crackers or golden Oreos
  • 1/4 cup unsalted butter, melted
  • 1 cup crushed golden Oreos or vanilla wafer cookies
  • 1/2 cup freeze-dried strawberries, crushed
  • 3 tablespoons melted butter
  • 1 1/2 cups white chocolate or candy melts, melted

Instructions

  1. Preheat your oven to 325°F and line a mini muffin tin or 8×8-inch pan with parchment paper.
  2. Combine crushed graham crackers with melted butter and press into the bottom of the muffin cups or pan.
  3. In a bowl, blend cream cheese and sugar until smooth, then incorporate eggs one at a time. Stir in sour cream, vanilla extract, and strawberry puree.
  4. Pour cheesecake mixture over the crust, filling mini muffin cups 3/4 full. Bake for 20-25 minutes or until edges are set.
  5. Cool to room temperature, then refrigerate for at least 4 hours to set.
  6. Mix crushed golden Oreos, freeze-dried strawberries, and melted butter until crumbly. Once cheesecake is chilled, remove from molds and roll in topping.
  7. Dip each bite in melted white chocolate and refrigerate for an additional 15-20 minutes.

Notes

For best texture, allow bites to chill overnight. Can be made vegan or gluten-free with substitutions.
