- 16 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 2 large eggs
- 1/2 cup strawberry puree or strawberry jam
- 1 1/2 cups crushed graham crackers or golden Oreos
- 1/4 cup unsalted butter, melted
- 1 cup crushed golden Oreos or vanilla wafer cookies
- 1/2 cup freeze-dried strawberries, crushed
- 3 tablespoons melted butter
- 1 1/2 cups white chocolate or candy melts, melted
Instructions
- Preheat your oven to 325°F and line a mini muffin tin or 8×8-inch pan with parchment paper.
- Combine crushed graham crackers with melted butter and press into the bottom of the muffin cups or pan.
- In a bowl, blend cream cheese and sugar until smooth, then incorporate eggs one at a time. Stir in sour cream, vanilla extract, and strawberry puree.
- Pour cheesecake mixture over the crust, filling mini muffin cups 3/4 full. Bake for 20-25 minutes or until edges are set.
- Cool to room temperature, then refrigerate for at least 4 hours to set.
- Mix crushed golden Oreos, freeze-dried strawberries, and melted butter until crumbly. Once cheesecake is chilled, remove from molds and roll in topping.
- Dip each bite in melted white chocolate and refrigerate for an additional 15-20 minutes.
Notes
For best texture, allow bites to chill overnight. Can be made vegan or gluten-free with substitutions.
