Ingredients

  • 1 cup heavy whipping cream
  • 1 cup fresh strawberries, pureed
  • 1 cup strawberry-flavored cereal or crushed strawberry cookies for topping

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Mix graham cracker crumbs with melted butter in a bowl, then press the mixture firmly into the bottom of a springform pan. Bake for 10 minutes and let it cool completely.
  3. In another bowl, beat together cream cheese, sugar, and vanilla extract until smooth. Add the pureed strawberries and mix until combined.
  4. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold it into the cream cheese mixture.
  5. Pour the cheesecake filling over the cooled crust in the springform pan and smooth the top.
  6. Refrigerate for at least 6 hours or overnight until the cheesecake has set properly.
