- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1 cup fresh strawberries, pureed
- 1 cup strawberry-flavored cereal or crushed strawberry cookies for topping
Instructions
- Preheat your oven to 325°F (160°C).
- Mix graham cracker crumbs with melted butter in a bowl, then press the mixture firmly into the bottom of a springform pan. Bake for 10 minutes and let it cool completely.
- In another bowl, beat together cream cheese, sugar, and vanilla extract until smooth. Add the pureed strawberries and mix until combined.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold it into the cream cheese mixture.
- Pour the cheesecake filling over the cooled crust in the springform pan and smooth the top.
- Refrigerate for at least 6 hours or overnight until the cheesecake has set properly.
- Before serving, top with strawberry-flavored cereal or crushed cookies.
