- 2 cups All-Purpose Flour
- 1 tbsp Baking Powder
- 1 tsp Salt
- 1 cup Unsalted Butter
- 1 cup Granulated Sugar
- 3 large Eggs
- 2 tsp Vanilla Extract
- 1 cup Whole Milk
- 1/2 cup Sugar (for Custard)
- 2 tbsp Cornstarch
- 4 large Egg Yolks
- 2 cups Fresh Strawberries
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Whisk together flour, baking powder, and salt in a bowl. Set aside.
- Cream the unsalted butter and granulated sugar until light and fluffy. Add the eggs, one at a time, followed by vanilla extract.
- Gradually add the flour mixture and milk, alternating between the two, until combined. Divide the batter between the prepared pans and bake for 25-30 minutes. Let them cool.
- In a saucepan, whisk together sugar, cornstarch, and salt. Gradually add milk while stirring until smooth.
- Cook over medium heat, stirring constantly until the mixture thickens. Remove from heat and stir in egg yolks while whisking quickly to prevent scrambling.
- Allow the custard to cool slightly before folding in chopped fresh strawberries.
- Once the cakes are cooled, place one layer on a serving plate. Spread a layer of custard on top, then place the second cake layer over it.
- Finish by spreading the remaining custard on top. Garnish with extra strawberries.
Notes
Using fresh ingredients enhances flavor. Cool cakes completely before assembling to prevent custard from melting.
