Description

A light and airy dessert that perfectly balances sweetness with a hint of tartness from fresh strawberries.

Ingredients

Scale
  • 2 cups strawberries, hulled and sliced
  • 1/2 cup sugar
  • 1 cup heavy cream
  • 2 teaspoons vanilla extract
  • 1 tablespoon lemon juice
  • 2 gelatin sheets or 1 teaspoon gelatin powder (optional)

Instructions

  1. Puree the strawberries with sugar and lemon juice until smooth.
  2. Dissolve gelatin in warm water if using, and add to the strawberry puree.
  3. Whip the heavy cream with vanilla extract until soft peaks form.
  4. Fold the strawberry puree into the whipped cream until well combined.
  5. Spoon the mixture into serving dishes and refrigerate for at least 2 hours to set.
  6. Serve chilled, optionally garnished with fresh strawberries or whipped cream.

Notes

Use fresh strawberries for the best flavor. Don’t overwhip the cream to maintain a light texture.
