- Zest of 1 lemon
- 1 cup powdered sugar
- 2 to 3 tablespoons fresh lemon juice
- Zest of 1/2 lemon (optional)
Instructions
- Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease the cups.
- Whisk together the flour, granulated sugar, baking powder, baking soda, and salt in a large mixing bowl until combined.
- Add the vegetable oil, eggs, whole milk, vanilla extract, and lemon zest to another bowl and whisk until smoothly blended.
- Pour the wet ingredients into the bowl of dry ingredients and mix gently until just combined.
- Fold in the diced strawberries carefully.
- Distribute the batter evenly among the muffin cups, filling each about three-quarters full.
- Bake for 20 to 22 minutes or until a toothpick inserted comes out clean.
- Let the muffins cool in the tin for about 5 minutes before transferring to a wire rack.
- Whisk the powdered sugar with lemon juice for the glaze and drizzle over the muffins once cooled.
