Description

Delightful bars combining fresh strawberries with a crunchy oat topping, perfect for snacks or desserts.


Ingredients

  • 1/2 cup unsalted butter (melted)
  • 1 cup all-purpose flour
  • 3/4 cup old-fashioned oats
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar (packed)
  • 1/2 teaspoon salt (or to taste)
  • 2 cups coarsely chopped fresh strawberries
  • 1/3 cup granulated sugar
  • 2 tablespoons lemon juice
  • 2 teaspoons cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare an 8-inch square pan by lining it with aluminum foil and spraying it with cooking spray.
  2. Melt the butter in a large, microwave-safe bowl for about 1 minute on high power. Add in the flour, oats, both sugars, and salt. Mix well until the mixture is dry and sandy with some larger clumps.
  3. Set aside one heaping cup of the mixture for the crumble topping. Transfer the remaining mixture into the prepared pan and press it down firmly to form an even crust layer.
  4. Combine the chopped strawberries, sugar, lemon juice, and cornstarch in a separate bowl. Toss gently until the strawberries are well-coated. Spread this mixture evenly over the pressed crust.
  5. Sprinkle the reserved crumble mixture evenly over the strawberry layer.
  6. Bake in the preheated oven for around 25 minutes or until golden brown and the strawberries are bubbling.
  7. Remove from the oven, and allow the bars to cool completely in the pan before lifting them out and cutting into bars.

Notes

Chill bars before cutting for cleaner slices. Use fresh, firm strawberries for best results.
