Description

A comforting dessert combining sweet strawberries and tart rhubarb topped with a crunchy oat mixture.


Ingredients

  • 1 lb Strawberries (hauled & sliced, about 3 cups)
  • 1 lb Rhubarb stalks (cut into 1/2 inch slices)
  • 3/4 cup Granulated sugar
  • 3 tablespoons Cornstarch
  • 2 tablespoons Lemon juice (freshly squeezed)
  • 1 teaspoon Vanilla extract
  • 3/4 cup All-purpose flour
  • 3/4 cup Light brown sugar
  • 3/4 cup Quick oats
  • 1/2 teaspoon Cinnamon
  • 1/4 teaspoon Salt
  • 2/3 cup Unsalted butter (melted)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the strawberries, rhubarb, granulated sugar, cornstarch, lemon juice, and vanilla extract. Toss them together until well-coated. Pour into a greased baking dish.
  3. In another bowl, mix the all-purpose flour, light brown sugar, quick oats, cinnamon, and salt. Drizzle the melted butter over the mixture and stir until well-blended and crumbly.
  4. Sprinkle the oatmeal topping evenly over the fruit layer. Bake for 25-35 minutes or until golden brown and bubbly. Let cool slightly before serving.
