Ingredients

  • 2 cups chopped strawberries
  • 2 cups chopped rhubarb
  • 3/4 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 2 1/2 cups all-purpose flour
  • 1 cup rolled oats
  • 1 cup brown sugar
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup unsalted butter, cold and cubed

Instructions

  1. Preheat the oven to 350°F and prepare a 9"x13" baking pan by greasing it lightly.
  2. Mix the filling: In a bowl, combine the chopped strawberries, rhubarb, granulated sugar, cornstarch, and lemon juice. Make sure everything is evenly mixed, then set it aside.
  3. Prepare the crumb mixture: In another bowl, mix the flour, oats, brown sugar, cinnamon, baking powder, and salt together.
  4. Cut in the butter: Use a pastry cutter or your fingers to incorporate the cold, cubed butter into the dry ingredients until you reach a coarse crumb consistency.
