Description

A delightful treat that perfectly combines rich brownies with light, fruity strawberry shortcake flavors, featuring a fudgy base, creamy cheesecake, and a luscious strawberry mousse topping.


Ingredients

  • 1 1/2 cups granulated sugar
  • 1/2 cup brown sugar, packed
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 box (3 ounces) strawberry gelatin
  • 1/2 cup boiling water
  • 1/2 cup cold water
  • 1 1/2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 3/4 cup Golden Oreos, crushed
  • 2 tablespoons freeze-dried strawberries, crushed
  • 2 tablespoons butter, melted
  • Whipped cream, for garnish
  • Fresh strawberries, halved, for garnish

Instructions

  1. Preheat your oven to 350°F (175°C), line a 9×13 inch dish with parchment paper, and lightly grease it.
  2. In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth.
  3. Add the eggs and vanilla extract. Mix until smooth.
  4. Sift in the flour, cocoa powder, and salt, then stir until just combined.
  5. Spread the batter evenly in the pan and bake for 22-25 minutes. Let them cool completely.
  6. In another bowl, beat softened cream cheese and 1/2 cup granulated sugar until fluffy. Add the egg and vanilla, mixing until smooth.
  7. Pour the cheesecake mixture over the cooled brownie layer and bake at 325°F for 20-22 minutes. Cool and refrigerate for 1 hour.
  8. Dissolve the strawberry gelatin in boiling water, then add cold water and cool.
  9. Whip heavy cream with powdered sugar until stiff peaks form.
  10. Fold the cooled gelatin into the whipped cream, then spread over the cheesecake layer and chill for 3 hours.
  11. For the crumble, mix crushed Oreos, freeze-dried strawberries, and melted butter. Sprinkle over the mousse layer.
  12. Garnish with whipped cream and halved fresh strawberries. Slice and serve chilled.

Notes

Use room temperature ingredients for better mixing. Allow layers to cool completely for distinct layering.
