  • 1/2 cup (60g) powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream (whipped to stiff peaks)
  • 1 1/2 cups fresh strawberries (diced)
  • 2 tablespoons strawberry jam (optional, for extra shine)
  • Whipped cream (for serving)
  • Sliced strawberries (for garnish)
  • Mint leaves (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk the eggs and granulated sugar until pale and fluffy. Add the vanilla extract, then gently fold in the flour, baking powder, and salt.
  3. Pour the batter onto the prepared baking sheet, spreading it evenly. Bake for about 15-20 minutes until it springs back when touched.
  4. Once baked, let the cake cool for a few minutes. Sprinkle some powdered sugar on a clean kitchen towel, invert the cake onto it, and roll it up from one end while it’s still warm.
  5. In a mixing bowl, beat the softened cream cheese with powdered sugar and vanilla until smooth. Fold in the whipped cream gently.
  6. Unroll the cooled cake and spread a layer of the cheesecake filling evenly across. Sprinkle the diced strawberries over the filling before rolling it up again.
  7. Drizzle with strawberry jam, and serve sliced with whipped cream, extra strawberries, and mint leaves.
