Description

A creamy and smooth cheesecake swirled with a tangy strawberry sauce, perfect for any occasion.


Ingredients

  • 1 ½ cups fresh or frozen strawberries, hulled
  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch mixed with 1 tablespoon water
  • 1 ½ cups graham cracker crumbs
  • â…“ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 24 ounces (3 blocks) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • ¼ cup heavy cream

Instructions

  1. Combine strawberries, sugar, and lemon juice in a small saucepan over medium heat. Cook until softened, about 5-7 minutes.
  2. Use a potato masher or fork to break the strawberries into a puree.
  3. Stir in the cornstarch slurry and cook until thickened, about 1-2 minutes. Remove from heat and cool completely.
  4. Preheat your oven to 325°F (160°C).
  5. Mix graham cracker crumbs, sugar, and melted butter in a medium bowl and press firmly into the bottom of a 9-inch springform pan.
  6. Bake the crust for 8-10 minutes and set aside to cool.
  7. Beat cream cheese and sugar together in a large bowl until smooth and fluffy, about 2-3 minutes.
  8. Add eggs one at a time, mixing well after each addition.
  9. Mix in vanilla extract, sour cream, and heavy cream until just combined.
  10. Pour the cheesecake filling onto the cooled crust, smoothing the top.
  11. Drop spoonfuls of the cooled strawberry sauce onto the cheesecake and swirl with a knife.
  12. Place the springform pan in a larger baking dish and fill with 1-2 inches of hot water.
  13. Bake for 55-65 minutes, or until edges are set and center jiggles slightly.
  14. Turn off the oven, crack open the door, and cool cheesecake in the oven for 1 hour.
  15. Remove from water bath and cool completely at room temperature.
  16. Refrigerate for at least 6 hours or overnight before serving.

Notes

Serve with additional strawberry sauce or fresh strawberries for garnish. Prevent cracking by using a water bath and allowing the cheesecake to cool gradually.
