Description

A delightful blend of savory shredded chicken, sweet corn, and fresh veggies topped with creamy avocado and cotija cheese, inspired by Mexican street corn.


Ingredients

  • 1 cup cooked rice
  • 1 lb chicken breast, cooked and shredded
  • 1 cup sweet corn, canned or grilled
  • 1/2 cup diced red onion
  • 1/2 cup diced bell pepper
  • 1/2 cup cotija cheese or feta
  • 1 avocado, sliced
  • 1/4 cup chopped cilantro
  • 1 lime, juiced
  • Salt and pepper to taste
  • Optional toppings: sour cream, hot sauce, jalapeños

Instructions

  1. Combine the cooked rice, shredded chicken, sweet corn, red onion, and bell pepper in a large bowl.
  2. Add lime juice, and season with salt and pepper to taste.
  3. Stir in half of the chopped cilantro and mix well.
  4. Divide the mixture into bowls.
  5. Top with cotija cheese, avocado slices, and additional cilantro.
  6. Add any optional toppings if desired.
  7. Serve immediately or pack in meal prep containers for later.

Notes

For added flavor, use homemade chicken stock for cooking rice and experiment with spices like cumin and smoked paprika.
