- 1 lb chicken breast, cooked and shredded
- 1 cup sweet corn, canned or grilled
- 1/2 cup diced red onion
- 1/2 cup diced bell pepper
- 1/2 cup cotija cheese or feta
- 1 avocado, sliced
- 1/4 cup chopped cilantro
- 1 lime, juiced
- Salt and pepper to taste

Instructions
- Combine the cooked rice, shredded chicken, sweet corn, red onion, and bell pepper in a large bowl.
- Add lime juice, and season with salt and pepper to taste.
- Stir in half of the chopped cilantro and mix well.
- Divide the mixture into bowls.
- Top with cotija cheese, avocado slices, and additional cilantro.
- Add any optional toppings if desired.
- Serve immediately or pack in meal prep containers for later.
Notes
For added flavor, use homemade chicken stock for cooking rice and experiment with spices like cumin and smoked paprika.
