Description

Ingredients

  • 2 cups cooked rice
  • 1 lb chicken breast, diced
  • 1 cup sweet corn, canned or frozen
  • 1/2 cup diced red onion
  • 1 avocado, sliced
  • 1/2 cup crema or sour cream
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste
  • Optional toppings: cheese, jalapeños, tortilla chips

Instructions

  1. In a skillet over medium heat, cook the diced chicken until fully cooked. Season with salt and pepper.
  2. In a separate pot, heat the corn until warmed through.
  3. Prepare your rice in bowls to create a base for the toppings.
  4. Top the rice with the cooked chicken, warm corn, diced red onion, and avocado slices.
  5. Drizzle with crema or sour cream and lime juice, and sprinkle chopped cilantro on top.
  6. Add any optional toppings if desired. Serve immediately.
