Description

A vibrant and comforting rice bowl filled with grilled chicken, fresh corn, and colorful veggies, topped with lime juice and cilantro.


Ingredients

  • 2 cups cooked rice
  • 1 lb grilled chicken (boneless, skinless)
  • 1 cup corn (fresh or canned)
  • 1/2 red onion (diced)
  • 1 cup cherry tomatoes (halved)
  • 1 avocado (sliced)
  • 1/4 cup cilantro (chopped)
  • 1 lime (for juice)
  • Salt and pepper to taste
  • Optional toppings: cheese, jalapeños, or sour cream

Instructions

  1. Cook the rice according to package instructions.
  2. While the rice is cooking, grill the chicken until fully cooked, then slice it into strips.
  3. Grill fresh corn until charred, then cut the kernels off the cob. For canned corn, drain and heat.
  4. Layer the cooked rice at the base of a bowl, followed by grilled chicken, corn, diced red onion, halved cherry tomatoes, and avocado slices.
  5. Squeeze fresh lime juice over the top and sprinkle with chopped cilantro, salt, and pepper.
  6. Add optional toppings as desired and serve immediately.

Notes

For the best flavor, use marinated chicken and avoid overcooking the veggies. Freshly cooked rice is recommended for better texture.
