- 2 cups cooked rice
- 1 lb grilled chicken (boneless, skinless)
- 1 cup corn (fresh or canned)
- 1/2 red onion (diced)
- 1 cup cherry tomatoes (halved)
- 1 avocado (sliced)
- 1/4 cup cilantro (chopped)
- 1 lime (for juice)
- Salt and pepper to taste
- Optional toppings: cheese, jalapeños, or sour cream
Instructions
- Cook the rice according to package instructions.
- While the rice is cooking, grill the chicken until fully cooked, then slice it into strips.
- Grill fresh corn until charred, then cut the kernels off the cob. For canned corn, drain and heat.
- Layer the cooked rice at the base of a bowl, followed by grilled chicken, corn, diced red onion, halved cherry tomatoes, and avocado slices.
- Squeeze fresh lime juice over the top and sprinkle with chopped cilantro, salt, and pepper.
- Add optional toppings as desired and serve immediately.
Notes
For the best flavor, use marinated chicken and avoid overcooking the veggies. Freshly cooked rice is recommended for better texture.
