- 2 cups cooked rice
- 1 lb grilled chicken, diced
- 2 cups sweet corn (canned or fresh)
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 lime, juiced
- 1/4 cup cilantro, chopped (optional)
Instructions
- Heat a large skillet over medium heat and add the olive oil.
- Add the diced grilled chicken to the skillet. Sprinkle with smoked paprika, garlic powder, salt, and black pepper. Stir until heated through, about 5-7 minutes.
- Once the chicken is warm, toss in the sweet corn. Drizzle in lime juice and mix well. Cook for another 2-3 minutes.
- Spoon the chicken and corn mixture over bowls of cooked rice.
- Sprinkle with chopped cilantro if desired.
