- 2 cups corn kernels

- 1/2 cup crumbled cotija cheese
- 1/4 cup sour cream
- 1/4 cup mayonnaise

Instructions
- Preheat your grill to medium-high heat for ideal grilling.
- Season the flank steak generously with salt, pepper, and chili powder.
- Grill the flank steak for about 4-5 minutes per side for medium-rare. Let it rest for 5 minutes before slicing.
- Grill the corn, red bell pepper, and red onion until charred and tender.
- Mix together the sour cream, mayonnaise, and chili powder to create a creamy sauce.
- To assemble, start with a base of rice, layer the steak, grilled vegetables, avocado, and crumbled cotija cheese. Drizzle with the sauce, garnish with cilantro, and serve with lime wedges.
Notes
