- ½ cup Biscoff cookie butter (slightly chilled)
Instructions
- Prepare the Filling: Scoop teaspoons of chilled Biscoff cookie butter onto a parchment-lined tray and freeze for at least 30 minutes.
- Make the Dough: Cream together butter, brown sugar, and granulated sugar until fluffy. Add eggs and vanilla extract, mixing well. In another bowl, whisk together flour, baking soda, baking powder, and salt. Gradually incorporate dry ingredients into the wet mixture. Fold in white chocolate chips if desired.
- Assemble the Cookies: Take a heaping tablespoon of cookie dough, flatten it in your palm, place a frozen Biscoff filling ball in the center, and wrap the dough around it, sealing completely.
- Bake: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper and arrange cookie dough balls. Bake for 10-12 minutes until edges are golden and centers are soft.
