- 2 cups sugar cookie crumbs
- 6 tbsp melted butter
- 2 tbsp sugar
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs, room temperature
- 1 cup sour cream
- 1 tsp pure vanilla extract
- ¼ tsp salt
- ½ cup sugar cookie dough (optional)
- Whipped cream
- Crushed cookies or sprinkles (for topping)
Instructions
- Preheat your oven to 325°F (160°C).
- In a mixing bowl, combine sugar cookie crumbs, sugar, and melted butter. Press this mixture into the bottom of a springform pan.
- Bake for 8-10 minutes and let it cool completely.
- In a mixing bowl, beat the cream cheese and granulated sugar until smooth. Add eggs one at a time.
- Stir in sour cream, vanilla extract, and salt. If using, fold in sugar cookie dough.
- Pour cheesecake filling over the cooled crust. Bake for 55-65 minutes until edges are set, center is jiggly.
- Turn off the oven and crack the door, letting the cheesecake cool for an hour. Chill in the refrigerator for at least 6 hours or overnight.
- Before serving, top with whipped cream, crushed cookies, or sprinkles.
