- 1/2 cup Unsalted Butter (room temperature)
- 1 cup All-Purpose Flour
- 1/4 cup Powdered Sugar
- 1/2 cup Lemon Juice (2–3 lemons)
- 1 tbsp Lemon Zest (finely grated)
- 3 Large Eggs (room temperature)
- 1 1/2 cups Granulated Sugar
- 1/2 cup All-Purpose Flour (sifted)
- Powdered Sugar (for dusting)
Instructions
- Preheat your oven to 350°F (175°C). Grease or line an 8×8 inch baking dish with parchment paper.
- Cream together the butter and powdered sugar until light and fluffy. Gradually add 1 cup of flour, mixing until just combined. Press the mixture into the bottom of the prepared pan.
- Bake the crust for about 15-20 minutes, or until light golden brown.
- Whisk together the eggs, granulated sugar, lemon juice, lemon zest, and sifted flour until smooth. Pour the filling over the hot crust.
- Bake again for an additional 20-25 minutes, or until the filling is set. Allow to cool before dusting with powdered sugar and cutting into squares.
Notes
Using fresh lemon juice makes a big difference in flavor. Make sure to check the doneness a few minutes before time is up to prevent overbaking.
