Ingredients

  • 1/2 cup Unsalted Butter (room temperature)
  • 1 cup All-Purpose Flour
  • 1/4 cup Powdered Sugar
  • 1/2 cup Lemon Juice (from 23 lemons)
  • 1 tbsp Lemon Zest (finely grated)
  • 3 Large Eggs (room temperature)
  • 1 1/2 cups Granulated Sugar
  • 1/2 cup All-Purpose Flour (sifted)
  • As needed Powdered Sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. Combine softened butter, 1 cup flour, and 1/4 cup powdered sugar until crumbly. Press this mixture into the prepared pan and bake for 20 minutes or until golden.
  3. Whisk together the eggs and 1 1/2 cups sugar until smooth. Add the lemon juice, zest, and sifted flour, mixing until fully combined.
  4. Pour the filling over the baked crust and return to the oven. Bake for an additional 25 minutes until the filling is set.
  5. Allow to cool completely in the pan. Once cool, dust with powdered sugar and cut into squares to serve.
