- 1/2 cup Unsalted Butter (room temperature)
- 1 cup All-Purpose Flour
- 1/4 cup Powdered Sugar
- 1/2 cup Lemon Juice (from 2–3 lemons)
- 1 tbsp Lemon Zest (finely grated)
- 3 Large Eggs (room temperature)
- 1 1/2 cups Granulated Sugar
- 1/2 cup All-Purpose Flour (sifted)
- As needed Powdered Sugar (for dusting)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- Combine softened butter, 1 cup flour, and 1/4 cup powdered sugar until crumbly. Press this mixture into the prepared pan and bake for 20 minutes or until golden.
- Whisk together the eggs and 1 1/2 cups sugar until smooth. Add the lemon juice, zest, and sifted flour, mixing until fully combined.
- Pour the filling over the baked crust and return to the oven. Bake for an additional 25 minutes until the filling is set.
- Allow to cool completely in the pan. Once cool, dust with powdered sugar and cut into squares to serve.
Notes
Using room temperature ingredients ensures a smooth batter. Fresh lemon juice enhances flavor. Cool completely before cutting for neat edges.
