Ingredients

- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup fresh lemon juice
- 1 teaspoon lemon zest
- 1/2 teaspoon baking powder
- Powdered sugar, for dusting
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare the pan by greasing an 8×8-inch baking dish or lining it with parchment paper.
- Mix the crust by combining melted butter, sugar, and flour in a bowl. Stir until crumbly and press evenly into the bottom of the baking dish.
- Make the filling by whisking together eggs, vanilla, lemon juice, lemon zest, and baking powder in a separate bowl. Pour over the crust.
- Bake for about 25 minutes until the edges are golden and the filling is set.
- Cool at room temperature, dust with powdered sugar, and cut into squares to serve.
Notes
For best flavor, use fresh lemon juice. Don’t overbake to avoid a dry texture.
