Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 bell pepper, chopped
  • 1 can pineapple chunks (in juice or syrup), drained
  • 1/2 cup sugar
  • 1/2 cup vinegar
  • 1/4 cup soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix the sugar, vinegar, soy sauce, and cornstarch until smooth.
  2. Heat oil in a pan over medium heat.
  3. Add chicken and cook until browned.
  4. Add bell peppers and cook for another 3-4 minutes.
  5. Pour in the sauce and pineapple, and stir to coat.
  6. Cook until the sauce thickens, about 5 minutes.
  7. Season with salt and pepper, and serve over rice.
