- 1 lb chicken breast, cut into bite-sized pieces
- 1 bell pepper, chopped
- 1 can pineapple chunks (in juice or syrup), drained
- 1/2 cup sugar
- 1/2 cup vinegar
- 1/4 cup soy sauce
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- In a bowl, mix the sugar, vinegar, soy sauce, and cornstarch until smooth.
- Heat oil in a pan over medium heat.
- Add chicken and cook until browned.
- Add bell peppers and cook for another 3-4 minutes.
- Pour in the sauce and pineapple, and stir to coat.
- Cook until the sauce thickens, about 5 minutes.
- Season with salt and pepper, and serve over rice.
Notes
For juicier results, consider using chicken thighs. Fresh pineapple can enhance the flavor.
