Ingredients

  • 2 cups vegetable broth or water
  • 1 cup sweet corn (fresh or frozen)
  • 2 tablespoons butter
  • 2 cloves garlic, minced

  • Chopped parsley for garnish (optional)

Instructions

  1. In a medium saucepan, bring the vegetable broth or water to a boil.
  2. Add the rice, reduce the heat to low, cover, and simmer for 15-20 minutes until tender and liquid is absorbed.
  3. While the rice is cooking, melt butter in a skillet over medium heat, then add the minced garlic and sauté for 1-2 minutes until fragrant.
  4. Stir in the sweet corn and cook for an additional 3-5 minutes until heated through.
  5. Fluff the rice with a fork and mix it with the corn and garlic in the skillet.
  6. Season with salt and pepper to taste, and serve warm, garnished with chopped parsley if desired.
