Instructions
- In a medium saucepan, bring the vegetable broth or water to a boil.
- Add the rice, reduce the heat to low, cover, and simmer for 15-20 minutes until tender and liquid is absorbed.
- While the rice is cooking, melt butter in a skillet over medium heat, then add the minced garlic and sauté for 1-2 minutes until fragrant.
- Stir in the sweet corn and cook for an additional 3-5 minutes until heated through.
- Fluff the rice with a fork and mix it with the corn and garlic in the skillet.
- Season with salt and pepper to taste, and serve warm, garnished with chopped parsley if desired.
Notes
For a vegan version, substitute butter with olive oil or a plant-based butter. Adjust sweetness by balancing fresh corn with a pinch of salt.
