Ingredients

  • 3 tablespoons extra virgin olive oil
  • 60 milliliters pure maple syrup
  • 1 teaspoon ground cinnamon
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 100 grams walnuts, roughly chopped
  • 110 grams goat cheese, crumbled
  • Fresh flat-leaf parsley, finely chopped, for garnish

Instructions

  1. Preheat the oven to 200°C.
  2. In a large mixing bowl, combine sweet potatoes with olive oil, maple syrup, cinnamon, salt, and pepper; toss to coat.
  3. Spread the seasoned sweet potatoes on a baking sheet lined with parchment paper.
  4. Roast in the preheated oven for 20 minutes, stirring halfway through.
  5. After 20 minutes, add walnuts and roast for an additional 10 minutes.
  6. Remove from oven and scatter crumbled goat cheese over the sweet potatoes.
  7. Transfer to a serving platter, garnish with parsley, and serve warm.
