A delicious balance of sweet and savory, this Sweet Potato Casserole with Brown Sugar Streusel features creamy sweet potatoes topped with a crunchy, caramelized streusel.

- 3–4 medium sweet potatoes (about 2 lbs), peeled and cubed
- 1 cup brown sugar (dark preferred)
- 1/2 cup salted butter, melted
- 1 tsp ground cinnamon
- 1 cup chopped pecans (optional)
- 1 tsp pure vanilla extract
- 1/4 tsp salt
- 1 cup all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C).
- Boil the peeled and cubed sweet potatoes in salted water until fork-tender, about 15-20 minutes. Drain and mash until smooth.
- In a mixing bowl, combine the mashed sweet potatoes with brown sugar, melted butter, vanilla extract, cinnamon, and salt. Mix until creamy.
- In another bowl, mix flour, chopped pecans (if using), brown sugar, and melted butter until crumbly for the streusel topping.
- Spread the sweet potato mixture into a greased 9×13 inch baking dish. Top with the streusel mixture and bake for 25-30 minutes or until golden brown.
Notes
For an extra flavor boost, consider adding a pinch of nutmeg or allspice to the sweet potato mixture.
