A delicious balance of sweet and savory, this Sweet Potato Casserole with Brown Sugar Streusel features creamy sweet potatoes topped with a crunchy, caramelized streusel.


Ingredients

  • 34 medium sweet potatoes (about 2 lbs), peeled and cubed
  • 1 cup brown sugar (dark preferred)
  • 1/2 cup salted butter, melted
  • 1 tsp ground cinnamon
  • 1 cup chopped pecans (optional)
  • 1 tsp pure vanilla extract
  • 1/4 tsp salt
  • 1 cup all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Boil the peeled and cubed sweet potatoes in salted water until fork-tender, about 15-20 minutes. Drain and mash until smooth.
  3. In a mixing bowl, combine the mashed sweet potatoes with brown sugar, melted butter, vanilla extract, cinnamon, and salt. Mix until creamy.
  4. In another bowl, mix flour, chopped pecans (if using), brown sugar, and melted butter until crumbly for the streusel topping.
  5. Spread the sweet potato mixture into a greased 9×13 inch baking dish. Top with the streusel mixture and bake for 25-30 minutes or until golden brown.

Notes

For an extra flavor boost, consider adding a pinch of nutmeg or allspice to the sweet potato mixture.
