- 2 cups sweet potato puree
- 1 egg
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1/4 cup unsalted butter
- 1/4 cup maple syrup
- 1 tablespoon fresh sage, chopped
- Salt and pepper to taste
Instructions
- In a mixing bowl, combine the sweet potato puree, egg, flour, and salt. Stir until a cohesive dough forms.
- Divide the dough into smaller sections and roll each piece into long ropes. Cut into pieces about an inch long to create the gnocchi.
- Bring a large pot of salted water to a boil. Add the gnocchi in batches; once they float to the top, they’re ready (about 2-3 minutes). Remove with a slotted spoon and set aside.
- In a skillet over medium heat, melt the butter until it turns golden brown.
- Pour in the maple syrup and add the chopped sage, stirring to combine. Toss the gnocchi in the skillet to coat in the sauce.
- Taste and season with salt and pepper to preference. Serve warm.
Notes
For best flavor, use freshly roasted sweet potatoes instead of canned puree. Avoid overworking the dough to keep the gnocchi light and fluffy.
