- 4 cups Sweet Potatoes (Cubed)
- 2 tablespoons Olive Oil (Or avocado oil)
- 1 teaspoon Smoked Paprika (Or regular paprika)
- Salt and Pepper (to taste)
- 1 pound Ground Beef (Or turkey, chicken, or black beans)
- 2 tablespoons Taco Seasoning (Homemade or store-bought)
- 1 cup Pico de Gallo (Diced tomatoes, onion, cilantro)
- 1 cup Guacamole (Mashed avocado with lime juice)
- 1/2 cup Sour Cream (Or Greek yogurt)
- Optional Toppings (Crumbled cheese, lime wedges, tortilla chips)
Instructions
- Preheat your oven to 400°F (200°C). Toss the cubed sweet potatoes with olive oil, smoked paprika, salt, and pepper. Spread them on a baking sheet and roast for about 20-25 minutes, until tender and caramelized.
- In a skillet over medium heat, add the ground beef or your choice of protein. Once browned, drain excess fat, then stir in the taco seasoning and a splash of water. Let it simmer for a few minutes until well combined.
- In a serving bowl, layer the roasted sweet potatoes and the cooked meat. Top generously with pico de gallo, guacamole, and sour cream. Add optional toppings for extra crunch.
- Serve and enjoy right away or allow it to cool for a few minutes if preferred.
Notes
To keep guacamole from browning, add a little extra lime juice or store it in an airtight container.
