- 4 cups Sweet Potatoes (Cubed)
- 2 tablespoons Olive Oil (Or avocado oil)
- 1 teaspoon Smoked Paprika (Or regular paprika)

- 1 pound Ground Beef (Or turkey, chicken, or black beans)
- 2 tablespoons Taco Seasoning (Homemade or store-bought)
- 1 cup Pico de Gallo (Diced tomatoes, onion, cilantro)
- 1 cup Guacamole (Mashed avocado with lime juice)
- 1/2 cup Sour Cream (Or Greek yogurt)
- to taste Optional Toppings (Crumbled cheese, lime wedges, tortilla chips)
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the cubed sweet potatoes in olive oil, smoked paprika, salt, and pepper. Spread them on a baking sheet.
- Roast the sweet potatoes for about 25 minutes, or until they are tender and slightly caramelized.
- In a skillet, heat a little oil, then add ground beef (or your choice of protein). Cook until browned.
- Stir in the taco seasoning and a splash of water. Simmer until thickened.
- Assemble your taco bowl by layering roasted sweet potatoes, seasoned meat, pico de gallo, guacamole, and sour cream.
- Finish with optional toppings like crumbled cheese and tortilla chips for added crunch.
Notes
For a vegan option, substitute sautéed mushrooms or lentils for the meat and add coconut yogurt instead of sour cream.
