- 1 pound Ground Beef (Or turkey, chicken, or black beans)
- 2 tablespoons Taco Seasoning (Homemade or store-bought)
- 1 cup Pico de Gallo (Diced tomatoes, onion, cilantro)
- 1 cup Guacamole (Mashed avocado with lime juice)
- 1/2 cup Sour Cream (Or Greek yogurt)
- To taste Optional Toppings (Crumbled cheese, lime wedges, tortilla chips)
Instructions
- Preheat your oven to 400°F (200°C). Toss the cubed sweet potatoes with olive oil, smoked paprika, salt, and pepper. Spread them out on a baking sheet and roast for about 25 minutes, or until tender and slightly caramelized.
- While the sweet potatoes are roasting, heat a skillet over medium heat and add the ground beef or your choice of protein. Cook until browned, then sprinkle in the taco seasoning, stirring well to combine.
- In a large bowl or individual serving bowls, layer the roasted sweet potatoes, followed by the cooked meat or beans. Top with pico de gallo, a generous scoop of guacamole, and a dollop of sour cream.
- Add crumbled cheese, extra salsa, and lime wedges for a beautiful finish.
