Ingredients

  • 4 cups Sweet Potatoes (Cubed)
  • 2 tablespoons Olive Oil (Or avocado oil)
  • 1 teaspoon Smoked Paprika (Or regular paprika)
  • To taste Salt
  • To taste Pepper
  • 1 pound Ground Beef (Or turkey, chicken, or black beans)
  • 2 tablespoons Taco Seasoning (Homemade or store-bought)
  • 1 cup Pico de Gallo (Diced tomatoes, onion, cilantro)
  • 1 cup Guacamole (Mashed avocado with lime juice)
  • 1/2 cup Sour Cream (Or Greek yogurt)
  • To taste Optional Toppings (Crumbled cheese, lime wedges, tortilla chips)

Instructions

  1. Preheat your oven to 400°F (200°C). Toss the cubed sweet potatoes with olive oil, smoked paprika, salt, and pepper. Spread them out on a baking sheet and roast for about 25 minutes, or until tender and slightly caramelized.
  2. While the sweet potatoes are roasting, heat a skillet over medium heat and add the ground beef or your choice of protein. Cook until browned, then sprinkle in the taco seasoning, stirring well to combine.
  3. In a large bowl or individual serving bowls, layer the roasted sweet potatoes, followed by the cooked meat or beans. Top with pico de gallo, a generous scoop of guacamole, and a dollop of sour cream.
  4. Add crumbled cheese, extra salsa, and lime wedges for a beautiful finish.
