- 2 tablespoons Olive Oil (or avocado oil)

- 1 pound Ground Beef (or turkey, chicken, or black beans)
- 2 tablespoons Taco Seasoning (homemade or store-bought)
- 1 cup Pico de Gallo (diced tomatoes, onion, cilantro)
- 1 cup Guacamole (mashed avocado with lime juice)
- 1/2 cup Sour Cream (or Greek yogurt)
- Optional Toppings: Crumbled cheese, lime wedges, tortilla chips
Instructions
- Preheat your oven to 425°F (220°C). Spread the cubed sweet potatoes on a baking sheet. Drizzle with olive oil, smoked paprika, salt, and pepper, tossing until well coated.
- Roast in the oven for about 20 minutes, flipping halfway through, until they are tender and slightly caramelized.
- While the sweet potatoes are roasting, cook the ground meat in a skillet over medium heat. Add taco seasoning and cook until the meat is no longer pink. If using black beans, just heat them through with seasonings.
- Assemble the bowls: Start with a base of roasted sweet potatoes, topped with seasoned meat (or beans), pico de gallo, guacamole, and sour cream. Feel free to add extra toppings as desired.
Notes
For best results, choose firm sweet potatoes and avoid overcrowding the baking sheet. Customize with your favorite toppings and proteins.
