Description

Delightful cheesecake bars combining tart rhubarb and sweet strawberries on a creamy filling with a buttery crust.


Ingredients

  • 1 cup Graham cracker crumbs
  • 1/4 cup Sugar
  • 1/2 cup Butter, melted
  • 2 cups Strawberries, chopped
  • 2 cups Rhubarb, chopped
  • 1 cup Sugar
  • 2 tablespoons Cornstarch
  • 2 cups Cream cheese, softened
  • 1/2 cup Sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of a greased 9×13 inch pan.
  3. Mix the chopped strawberries, rhubarb, 1 cup sugar, and cornstarch. Spread this over the crust.
  4. Beat cream cheese until smooth, gradually add 1/2 cup sugar, then eggs one at a time and vanilla extract. Pour over the fruit layer.
  5. Bake in the oven for 35-40 minutes until the cheesecake is set and edges are golden.
  6. Cool to room temperature and then refrigerate for at least 2 hours before slicing.

Notes

For best results, use fresh fruit and allow the bars to chill before serving. Parchment paper can help with cleanup.
