Delightful cheesecake bars combining tart rhubarb and sweet strawberries on a creamy filling with a buttery crust.

- 1 cup Graham cracker crumbs
- 1/4 cup Sugar
- 1/2 cup Butter, melted
- 2 cups Strawberries, chopped
- 2 cups Rhubarb, chopped
- 1 cup Sugar
- 2 tablespoons Cornstarch
- 2 cups Cream cheese, softened
- 1/2 cup Sugar
- 2 large Eggs
- 1 teaspoon Vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- Combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of a greased 9×13 inch pan.
- Mix the chopped strawberries, rhubarb, 1 cup sugar, and cornstarch. Spread this over the crust.
- Beat cream cheese until smooth, gradually add 1/2 cup sugar, then eggs one at a time and vanilla extract. Pour over the fruit layer.
- Bake in the oven for 35-40 minutes until the cheesecake is set and edges are golden.
- Cool to room temperature and then refrigerate for at least 2 hours before slicing.
Notes
For best results, use fresh fruit and allow the bars to chill before serving. Parchment paper can help with cleanup.
