  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/2 cup salsa
  • 1/4 cup Greek yogurt or sour cream
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the diced sweet potatoes with olive oil, chili powder, salt, and pepper. Spread them on a baking sheet and roast for about 25 minutes, or until tender.
